Absolutely amazing experience, if you are a fan of balsamic vinegar and are in Modena this is a non miss experience. Extremely friendly tour, going into details about the production but also the traditions and family customs tied to balsamic vinegar production that has been handed down over 6 generations. All followed by a tasting of balsamic’s from 5 years to 100 years aged paired with cheese, cold cuts and wine. Stunning experience.
Highlight of our honeymoon

This review is long over due. This tour was the highlight of our honeymoon. My husband and I love balsamic vinegar and it was great to see how it is made from a family that has been doing it for generations. Marcello and his father Paollo were warm and hospitable and showed us a great time. We were lucky enough to be the only ones on the tour, so we felt catered to. Not only was it an informative experiance but we also got to eat delicious fresh made cheeses, breads, drink plenty of wine, and of course try different aged balsamics. We would happily go back to experience it all over again.

I can not recommend this enough or describe what enough what a great experience this was. It was fascinating to learn about this family’s history and traditions, and to feel like they’re sharing this specially with you. Fascinating to learn about the processes in making balsamic vinegar and the tasting experience was amazing including Marcello’s wife made amazing cake to share with us and other visitors that day, as well as locally fresh made ricotta.

My husband surprised me with a tour at Acetaia Cavedoni on our recent trip to Italy, and it was easily a highlight of our whole time there. The distillery is run entirely by the father and son team, Paolo and Marcello Cavedoni. Marcello was incredibly warm and welcoming, and his passion for his sixth generation owned and operated business was so evident throughout the tour. The history, intentionality and care put into every step of the process is incredible. After a tour of the property and barrels, we were provided with some of the best food we've ever had: wine, local cheeses, meats and bread all produced within miles of the distillery. And of course, a wide variety of balsamic samplings! I could go on, but I'll just say this: visiting Marcello and Paolo at Acetaia Cavedoni will be an experience full of astounding history, deep family passion and care, and delicious food. Couldn't recommend it more.
Spectacular Experience in Modena

For anyone interested in food, Modena or the truth about Balsamic vinegar, this tour is a must. The tour includes not only a complete review of the process of making true Balsamic Vinegar, starting with the vineyards and grapes, but also includes a fantastic tasting. Led by Marcello and his father, Paolo, who own and operate the business, one gets to sample vinegars of various ages, but you are given great snacks that included, for us, prosciutto, salami, mortadella and wine as a bonus. Marcello leads the tour and his passion and connection to the history and culture represented by his presentation are truly impressive. Don't miss it.

We got a warm welcome. The tour was interesting and very authentic. The balsamic production is a long tradition in this family and they are so passionate about it. The Balsamico tastes so good as well as the Lambrusco wine. Just to recommend.

My husband and I were the only ones at the tour. We had the undivided attention of the owner. He was extremely informative about the balsamic vinegar process. This is one of the only tours my husband wanted to pursue and we were not disappointed. We would highly recommend to anyone coming to the area.

I didn't realise until after this tour how little I knew about balsamic vinegar! This is a great tour with friendly hosts. Instructions on how to find the venue though could be improved.

We were curious about the process of making balsamic vinegar. This tour experience was perfect. Not only did we learn the history of this family run business, the grape to table process of balsamic vinegar but we got to experience the hospitality of a family. We arrived on the first day of harvest. There was excitement in the air. The tasting gave us the chance to really see/taste the differences in balsamic vinegar but also a chance to taste other products of the area (cheese, meats). One tip: it’s a 30 minute drive from Modena City Center. If you are driving, use Cavedoni to search not the street address. The street address takes you to the wrong place.

We really enjoyed our visit. We had Sat Nav problems and we were late but our host was very helpful and was waiting for us when we arrived. Put in Antica Acetaia Cavedoni rather than just the address. WE were shown the vineyard and the battery of barrels and everything was explained very clearly. It was lovely to hear about the family going back through the generations and to see the battery of barrels already started for Marcello's young children. Marcello's father came through to greet us which we thought was very polite and welcoming. The tastings were absolutely delicious. We even got to taste 100 year old balsamic. needless to say we came away vowing never to buy supermarket balsamic and laden with presents for home. It was interesting to get out of Modena and see the countryside. Highly recommended.
